About this time in Lent I am so over not having meat on Fridays and I am out of ideas. So here are a few for you in case you are in the same boat.
Grilled Cheese and Tomato Soup
Bean and Cheese Quesadillas you can add some peppers and onions in the mix too (serve with salsa, sour cream and quacamole it is sooooo good)
Fish n Chips with a dark beer of course (better than making your own, visit a local lenten fish fry and support the parish or group serving)
Cheese pizza or pizza with mushrooms, onions and peppers (a great, easy, fun menu item to make with kids)
Shrimp poppers with tater tots
Mac n Cheese
A personal favorite of mine is just a meal of appetizers and desserts (perfect for watching March Madness) you can do shrimp cocktail, spinach artichoke dip, chips and salsa and mini quesadillas for appetizers and mini cheesecakes, brownie bites, cupcakes or petite fours for dessert... with all the yummy food no one will miss the meat!
What are some of your Friday meals in Lent?
Lenten Daily Challenge: Try to find the time to read an entire Gospel in one sitting (St. Mark's is the shortest)
Rosary Special Intention: For all the cooks who work hard to come up with new, exciting, tasty and healthy menu items
God Bless!
